Endive Growing Season
While each variety of endive may differ slightly in time to maturity and growing conditions, the following generally applies to all endive varieties. Endive grows best in areas that get at least six hours of direct sunlight each day. Endive seeds should be planted 1 inch apart in rows spaced 18 inches apart. Endive does best in soil with a pH between 5.0 and 6.8.
On average, it takes between 40 and 70 days for the endive to reach maturity, and you will know that the endive is ready to harvest when the plant has a 6” spread and is 8 to 10 inches tall.
