Early Wonder beets are an heirloom variety of beet first introduced to the United States back in 1811. These beets are primarily grown for their delicious greens, but the vegetable itself is great in its own right. This beet is mild but sweet and tastes great pickled or cooked up in a pan like spinach.
Early Wonder Beets Growing Season
Early Wonder beets are a cold-weather vegetable and should be planted early in the spring, approximately four weeks prior to the last frost of the season. Your beet seeds should be planted in an area with loose soil high in organic matter that gets an average of six or more hours of direct sunlight a day. You should plant your Early Wonder beet seeds 12” apart and cover with ½ inches of fine soil to give the plants adequate space to reach their mature size. This beet is very sensitive to acidic soils, so you should try to keep the soil pH between 6.0 and 7.0.
On average it takes 55 to 60 days for an Early Wonder beet to reach maturity, and you will know when your beet is ready for harvest when the plant has a 5” to 8” spread and is 10” to 12” tall. An Early Wonder beet can be harvested once its roots reach 1” in diameter if you want “baby beets” and up to 3” in diameter for mature beets.
